- 1 zucchini
- 1 egg
- ½ can TaoTao coconut milk
- ½ cup breadcrumbs
- Salt, pepper, sweet paprika to taste
- Cooking oil
- Your favourite sauce to serve with
Wash the zucchini, slice into medium-sized rings.
Combine the egg with coconut milk. Add salt, pepper, and sweet paprika.
Dip each ring in the mixture, then cover thoroughly with breadcrumbs.
Fry in hot oil until golden-brown.
Remove excess fat with a paper towel.
Serve hot with your favourite sauce.
