Ingredients
- 4 eggs
- 100 g white asparagus or green bean
- 4 tablespoons flour
- 4 tablespoons grated yellow cheese
- 2 tablespoons TaoTao soy sauce with reduced salt content
- Pepper to taste
- 2 teaspoons butter
- Chopped chives
Preparing

Step 1.
Remove the ends of the beans, cut into smaller pieces and boil for 15 minutes in salted boiling water. Strain.

Combine the egg yolks with flour, soy sauce, pepper, and half the grated yellow cheese.

Beat the eggs into a rigid foam.

Gently combine the two masses, taking care that the eggwhites don't drop. Place the asparagus inside.

Transfer to the ramekins, sprinkle with the remaining cheese.

Put the ramekins in a heat-resistant container filled with boiling water up to about half the height of the ramekins.

Bake in an oven pre-heated to 180 degrees for 15 minutes.

Serve with chives.
